Description

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup tapioca starch
  • 1/2 cup brown sugar

  • 3/4 cup water
  • 1/4 cup annatto water (optional)
  • 1/2 tsp lye water (lihiya)

Method

  1. In a mixing bowl, combine all-purpose flour, tapioca starch, brown sugar, and baking powder. Whisk until well combined.
  2. Add water, annatto water (optional), and lye water (lihiya). Mix until the batter is smooth and free of lumps.
  3. Grease muffin molds or line them with cupcake liners. Fill them with the batter until 3/4 full.
  4. Steam the kutsinta for 15-20 minutes or until a toothpick inserted comes out clean.
  5. Remove from the steamer and let it cool for a few minutes before unmolding.
  6. Serve with grated coconut or caramel sauce.

Notes

  • Make sure to use food-grade lye water (lihiya) and handle it with care as it can cause burns.
  • Annatto water gives the kutsinta its distinct orange color but it can be omitted if not available.
  • Leftover kutsinta can be stored in an airtight container in the fridge for up to 3 days.
