  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, undrained
  • 1 can condensed cream of mushroom soup
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Equipment

  • Large skillet
  • 9x13 inch baking dish
  • Measuring cups and spoons
  • Cutting board and knife
  • Wooden spoon
  • Aluminum foil

Method

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the sliced kielbasa over medium heat until browned, about 5 minutes.
  3. Add the chopped onion, green and red bell peppers, and minced garlic to the skillet. Sauté the vegetables with the kielbasa until softened, about 5 minutes more.
  4. Add the undrained diced tomatoes, condensed cream of mushroom soup, long-grain white rice, chicken broth, smoked paprika, dried thyme, salt, and pepper to the skillet. Stir everything together until well combined.
  5. Transfer the mixture to a 9x13 inch baking dish and cover it tightly with aluminum foil.
  6. Bake the casserole in the preheated oven for 30 minutes.
  7. Remove the foil from the dish and continue baking the casserole for an additional 10 minutes or until the rice is fully cooked and the top is golden brown and crispy.
  8. Let the casserole cool for a few minutes before serving. You can garnish the dish with some chopped fresh parsley if desired.

Notes

  • You can use any color bell pepper you like, or a combination of colors.
  • If you can't find smoked kielbasa, you can use regular kielbasa or another type of smoked sausage.
  • You can substitute the condensed cream of mushroom soup with condensed cream of chicken soup or condensed tomato soup.
  • If you prefer a spicier casserole, you can add some crushed red pepper flakes or cayenne pepper to the dish.

Recipe Tips

  • Make sure to cover the casserole tightly with aluminum foil to prevent the liquid from evaporating too quickly and the rice from drying out.
  • You can prepare the casserole ahead of time and refrigerate it until you're ready to bake it. Just make sure to add an extra 10-15 minutes to the cooking time if you're baking the casserole straight from the fridge.
  • You can also freeze the casserole for up to 3 months. To reheat it, thaw it in the fridge overnight and then bake it in the oven at 375°F (190°C) for 30-40 minutes or until heated through.
  • If you want to add some extra vegetables to the casserole, you can toss in some sliced mushrooms, chopped celery, or diced carrots.
  • You can serve the casserole with a side salad or some crusty bread for a complete meal.

Enjoy your delicious kielbasa and rice casserole!
