Method
1. In a large pot, heat the achiote oil over medium heat. Add the pork and cook until browned on all sides. 2. Add the onion, green bell pepper, garlic, oregano, cumin, salt, and black pepper. Cook for about 5 minutes, until the vegetables are softened. 3. Add the chicken broth and bring to a boil. Reduce the heat and simmer for about an hour, until the pork is tender. 4. While the pork is cooking, prepare the dough. Combine the grated plantains, yucca, and taro root in a large mixing bowl. 5. Add about 1/2 cup of the pork cooking liquid to the dough and mix well. 6. Cut banana leaves into 8 inch squares and place a spoonful of the dough in the center of each leaf. 7. Add a spoonful of the pork mixture on top of the dough. 8. Fold the banana leaf to form a package and secure with aluminum foil. 9. Place the pasteles in a large pot and cover with water. 10. Bring the water to a boil and then reduce the heat to a simmer. 11. Cook the pasteles for about an hour, until they are cooked through. 12. Serve hot and enjoy.
