Description

Mochi is a traditional Japanese rice cake made with glutinous rice flour, sugar, and water. It has a soft, chewy texture and can be filled with various sweet or savory fillings. This recipe uses rice flour, making it an easy and accessible way to make mochi at home.

Prep Time: 30 minutes

Cook Time: 30 minutes

Ingredients

  • 1 1/2 cups glutinous rice flour
  • 1/2 cup granulated sugar
  • 1 cup water
  • Cornstarch, for dusting
  • Food coloring (optional)
  • Filling of your choice (red bean paste, chocolate, fruit, etc.)

Equipment

  • Large mixing bowl
  • Whisk or spoon
  • 8x8 inch baking dish
  • Parchment paper
  • Steamer basket or pot with steamer insert
  • Clean cloth or paper towel

Method

  1. In a large mixing bowl, whisk together the glutinous rice flour and sugar.
  2. Add the water and mix until a smooth batter forms. If desired, add a few drops of food coloring and mix until evenly distributed.
  3. Grease an 8x8 inch baking dish and line the bottom with parchment paper.
  4. Pour the batter into the prepared dish and smooth the top with a spatula.
  5. Place the baking dish in a steamer basket or pot with a steamer insert.
  6. Steam the mochi for 20-25 minutes or until the top is set and the mochi is fully cooked.
  7. Remove the mochi from the steamer and let it cool for a few minutes.
  8. Dust a clean cloth or paper towel with cornstarch and transfer the mochi onto it.
  9. Use a knife or cookie cutter to cut out small rounds of mochi.
  10. Place a small amount of filling in the center of each mochi round and seal the edges by pinching them together.
  11. Roll the mochi balls in more cornstarch to prevent them from sticking together.
  12. Enjoy your homemade mochi!

Notes

  • If you don't have a steamer basket or pot with a steamer insert, you can improvise by placing a heatproof plate or rack at the bottom of a large pot and adding enough water to come just below the plate. Bring the water to a boil and place the baking dish on the plate. Cover the pot tightly and steam the mochi as directed.
  • If you're having trouble finding glutinous rice flour, look for it at Asian grocery stores or online.
  • Be careful not to over-steam the mochi, as it can become too sticky and difficult to work with.
  • You can store leftover mochi in an airtight container at room temperature for up to 2 days, or in the fridge for up to a week. Just be sure to dust them with more cornstarch before storing to prevent sticking.
