Ingredients

For the rice:

  • 4 cloves
  • 2 cinnamon sticks
  • 2 tablespoons of ghee
For the meat:
  • 1 pound of chicken or lamb
  • 1 tablespoon of ginger paste
  • 1 tablespoon of garlic paste
  • 1 tablespoon of coriander powder
  • 1 tablespoon of cumin powder
  • 1 tablespoon of red chili powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 cup of yogurt
  • 1/4 cup of lemon juice
  • 1/4 cup of vegetable oil
  • 1 teaspoon of salt
For the garnish:
  • 1 onion, sliced
  • 1/4 cup of raisins
  • 1/4 cup of almonds, sliced
  • 1/4 cup of cashews, sliced

Equipment

  • A large pot with a lid
  • A frying pan
  • A blender or food processor

Method

  1. Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. In a large pot, heat the ghee over medium heat. Add the cumin seeds, fennel seeds, bay leaves, cardamom pods, cloves, and cinnamon sticks, and cook until fragrant, about 1 minute.
  3. Add the rice to the pot and stir to coat with the spices. Add the water and salt and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is tender and the water has been absorbed.
  4. In a blender or food processor, combine the ginger paste, garlic paste, coriander powder, cumin powder, red chili powder, turmeric powder, yogurt, lemon juice, vegetable oil, and salt. Blend until smooth.
  5. Marinate the meat in the spice mixture for at least 30 minutes, or overnight in the refrigerator.
  6. Heat a frying pan over high heat. Add the marinated meat and cook, stirring occasionally, until browned on all sides, about 5 minutes.
  7. Transfer the meat to a baking dish and roast in the oven at 350°F for 30 minutes, or until cooked through.
  8. In the same frying pan, cook the sliced onion until caramelized, about 10 minutes. Add the raisins, almonds, and cashews, and cook for an additional 5 minutes.
  9. Arrange the cooked rice on a large platter. Top with the roasted meat and garnish with the caramelized onions, raisins, almonds, and cashews.
  10. Serve hot with a side of salad or chutney.

Notes

Mandi rice can also be made with beef or fish, depending on your preference. You can also adjust the spice level to your liking by adding more or less red chili powder.
