Description

Japanese sweet rice balls, also known as mochi, are a traditional Japanese sweet that is enjoyed by many. These little balls of chewy goodness are made with sweet rice flour, sugar, and water. They are often filled with sweet fillings like red bean paste, or eaten plain with a sprinkle of kinako powder.

Prep Time

Preparation time for this recipe is about 30 minutes.

Cook Time

Cooking time for this recipe is about 20 minutes.

Ingredient

  • 2 cups sweet rice flour (mochiko)
  • 1/2 cup granulated sugar
  • 1 1/2 cups water
  • 1/2 cup cornstarch or potato starch
  • Fillings of your choice (optional)
  • Kinako powder for dusting (optional)

Equipment

  • Large mixing bowl
  • Wooden spoon or spatula
  • Steamer basket or bamboo steamer
  • Parchment paper or banana leaves

Method

  1. In a large mixing bowl, combine the sweet rice flour, sugar, and water. Mix until a smooth batter forms.
  2. Dust a work surface with cornstarch or potato starch. Place the dough on the surface and knead for a few minutes until it becomes smooth.
  3. Divide the dough into small pieces, about one tablespoon each.
  4. If you are using fillings, flatten the dough piece in your palm and place a small amount of filling in the center. Fold the dough around the filling and roll it into a ball.
  5. If you are not using fillings, roll the dough pieces into balls.
  6. Cut parchment paper or banana leaves into small squares and place them in the steamer basket or bamboo steamer.
  7. Place the rice balls onto the parchment paper or banana leaves, making sure they are not touching each other.
  8. Steam the rice balls for about 20 minutes until they become soft and chewy.
  9. Remove the rice balls from the steamer and dust them with kinako powder if desired.
  10. Serve and enjoy!

Notes

  • Be careful not to over-steam the rice balls, as this can cause them to become tough and chewy.
  • If you are using fillings, make sure they are not too wet, as this can cause the rice balls to break apart during steaming.

Recipe Tips

  • If you want to make the rice balls ahead of time, you can freeze them after steaming. To serve, simply reheat them in the microwave or on the stovetop.
  • If you don't have a steamer basket or bamboo steamer, you can use a metal colander or a wire rack set inside a pot with a lid.
  • If you don't have kinako powder, you can use cocoa powder or sesame seeds instead.

Enjoy this traditional Japanese sweet with your family and friends!
