Ingredients

Method

1. Rinse the rice under cold water and soak it for 20-30 minutes. 2. In a medium-sized pot, add 4 cups of whole milk and bring it to a boil. 3. Drain the soaked rice and add it to the boiling milk. 4. Reduce the heat to low and let the rice simmer for 25-30 minutes. Stir occasionally to prevent the rice from sticking to the bottom of the pot. 5. After 25-30 minutes, the rice should be cooked and the milk should have thickened. 6. Add 1 cup of sugar and stir until the sugar has dissolved. 7. Add 1/2 tsp of cardamom powder and stir. 8. In a small frying pan, add 1 tbsp of ghee and melt it on medium heat. 9. Add 1/4 cup of raisins and fry them until they are plump. 10. Add the fried raisins, 1/4 cup of chopped almonds, and 1/4 cup of chopped pistachios to the kheer and stir. 11. Turn off the heat and let the kheer cool to room temperature. 12. Serve the kheer chilled or at room temperature.

  • You can adjust the amount of sugar according to your taste.
  • You can add more or less nuts and raisins according to your preference.
  • You can substitute Basmati rice with any other long-grain rice.
