Method

1. Rinse the rice in cold water until the water runs clear. Soak the rice for 30 minutes in cold water. 2. In a large pot, heat 3 tablespoons of oil and 2 tablespoons of ghee over medium heat. Add the bay leaf, cinnamon sticks, cloves, and cardamom pods. Fry until fragrant. 3. Add the sliced onions and fry until golden brown. Add the ginger-garlic paste and fry for 1-2 minutes until fragrant. 4. Add the chopped tomatoes, green chilies, red chili powder, turmeric powder, cumin seeds, coriander powder, garam masala, and salt. Fry for 5-7 minutes until the tomatoes are soft and the spices are fragrant. 5. Add the marinated meat or vegetables and fry for 5-7 minutes until the meat or vegetables are browned. 6. Drain the rice and add it to the pot. Fry for 2-3 minutes until the rice is coated with the spices. 7. Add 4 cups of water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked. 8. In a small bowl, mix the saffron strands with warm milk and set aside. 9. Once the rice is cooked, remove the lid and pour the saffron milk over the rice. Cover the pot and let it sit for 5 minutes. 10. Garnish with fresh cilantro and serve with raita.
