Method

Mix the rice and black gram paste in a large mixing bowl. Add salt to taste and mix well. Keep the batter in a warm place for 3-4 hours or until it ferments and becomes fluffy.

Step 4: Steaming

Grease the idli plates with oil or ghee. Pour the batter into the idli plates, filling them up to ¾ of the capacity. Steam the idlis in an idli steamer or pressure cooker for 10-12 minutes on high flame.

Step 5: Serving

Once the idlis are steamed, remove them from the steamer and let them cool down for a minute or two. Serve hot with coconut chutney or sambar.

  • Make sure to soak the rice and black gram for at least 4-5 hours to get a smooth consistency.
  • The batter should be of pouring consistency, neither too thick nor too thin.
  • Keep the batter in a warm place for fermentation, as it requires a warm temperature to rise and become fluffy.
