Method
1. Preheat oven to 375°F. 2. Rinse the wild rice in cold water and drain. 3. In a large skillet, heat olive oil over medium-high heat. 4. Remove the pork loin from the skillet and set aside. 7. In the same skillet, add the wild rice and 2 cups of water. 8. Bring the water to a boil, reduce the heat to low, and cover the skillet. 9. Simmer for approximately 20-25 minutes or until the wild rice is fully cooked and tender. 10. Transfer the wild rice to a baking dish and place the pork loin on top. 11. Cover the baking dish with aluminum foil and bake for approximately 45-50 minutes or until the pork loin is fully cooked and reaches an internal temperature of 145°F. 12. Remove the baking dish from the oven and let the pork loin rest for 5-10 minutes before slicing and serving.Notes
