- 1/2 cup almond butter
- 1/2 cup honey
- 1 tsp vanilla extract
- 4 cups puffed rice cereal
- 1/4 cup unsweetened shredded coconut
- 1/4 cup mini chocolate chips (optional)

- Wooden spoon
- 8x8 inch baking dish
- Parchment paper
Method
- Line an 8x8 inch baking dish with parchment paper and set aside.
- In a large mixing bowl, combine the almond butter, honey, and vanilla extract. Mix well.
- Add the puffed rice cereal and shredded coconut to the bowl. Mix until well combined.
- If desired, fold in the mini chocolate chips.
- Transfer the mixture to the prepared baking dish and press firmly into an even layer.
- Place the dish in the refrigerator to chill for at least 30 minutes.
- Once chilled, remove the mixture from the dish by lifting the parchment paper. Cut into squares and serve.
