- 8 sheets of rice paper
- 1 carrot, grated
- 1 cucumber, thinly sliced
- 1 avocado, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
Equipment
- Large bowl with warm water
- Cutting board
- Sharp knife
- Small bowl for dipping sauce
Method
- Prep all vegetables and herbs.
- Mix soy sauce, rice vinegar, honey, and sesame oil in a small bowl to make the dipping sauce.
- Fill the large bowl with warm water.
- Place one sheet of rice paper in the water for approximately 15 seconds, or until the paper is soft and pliable.
- Place the rice paper on a cutting board.
- Place a few slices of each vegetable and some herbs on the bottom half of the rice paper.
- Sprinkle some chopped peanuts over the vegetables.
- Roll the bottom half of the rice paper over the filling, tucking it in tightly.
- Roll the sides of the rice paper inwards, and continue rolling until the rice paper is completely rolled up.
- Repeat steps 4-9 until all ingredients are used up.
- Serve with the dipping sauce.
Notes
It is important to not over-soak the rice paper, as it can become too soft and difficult to roll. If you are having trouble rolling the rice paper, try using less filling.Nutrition Info
