Method

  1. Season the goat meat with salt and black pepper.
  2. In a Dutch oven, heat the vegetable oil over medium-high heat.
  3. Add the goat meat and brown on all sides, about 5 minutes.

  5. In the same Dutch oven, add the onion, garlic, ginger, scallions, thyme, and scotch bonnet pepper.

  8. Add the goat meat back to the Dutch oven and stir to coat with the curry mixture.
  9. Add enough water to the Dutch oven to cover the goat meat and bring to a simmer.
  10. Cover the Dutch oven and simmer for 1 1/2 to 2 hours, or until the goat meat is tender.
  11. While the goat meat is cooking, prepare the rice and peas.
  12. In a large pot, combine the rice, red kidney beans, coconut milk, and water.
  13. Bring to a boil over high heat, then reduce the heat to low and simmer for 20-25 minutes, or until the rice is cooked through.
  14. Fluff the rice with a fork and serve with the curry goat.

Notes

  • If you can't find goat meat, you can substitute lamb or beef.
  • If you can't handle spicy foods, omit the scotch bonnet pepper.
  • Leftover curry goat can be stored in the refrigerator for up to 3 days, or frozen for up to 3 months.
