- 2 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons olive oil
- ½ cup crumbled feta cheese
- Chopped fresh parsley for garnish
Equipment
- Large skillet or saucepan with a lid
- Cutting board and knife
- Measuring cups and spoons
- Wooden spoon
Method
- Heat olive oil in a large skillet or saucepan over medium heat. Add the diced onions and garlic and sauté for 3-4 minutes or until the onions are translucent.
- Add the rice to the skillet and stir for 1-2 minutes or until the rice is lightly toasted.
- Stir in the diced tomatoes, vegetable broth, dried oregano, dried thyme, paprika, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the skillet with a lid, and simmer for 18-20 minutes or until the rice is cooked and the liquid is absorbed. Stir occasionally to prevent the rice from sticking to the bottom of the skillet.

- Garnish with fresh parsley and serve hot.
Notes

- If you want a spicier version of this recipe, you can add a pinch of red pepper flakes or cayenne pepper to the tomato sauce.
- You can also add some chopped Kalamata olives or roasted red peppers to the rice for an extra burst of flavor and color.
