- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of olive oil

- Large pot or Dutch oven
- Wooden spoon

Method
- Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Add the chicken pieces and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
- Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the rice to the pot and stir until coated with the onion and garlic mixture.
- Add the chicken broth, paprika, thyme, oregano, salt, and black pepper to the pot and stir well.
- Return the chicken pieces to the pot and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour and 15 minutes.
- After 1 hour and 15 minutes, remove the lid and stir the mixture. Cover the pot again and cook for an additional 15 minutes.
- Remove the pot from the heat and let it sit for 10 minutes before serving.
- Garnish with chopped parsley, if desired.
