Method

  1. Start by grating the cauliflower using a food processor or grater. Set aside.

  4. Add the frozen mixed vegetables to the wok and stir-fry for another 2-3 minutes until they are thawed and cooked through.
  5. Push the vegetables to one side of the wok and pour the beaten eggs onto the other side. Scramble the eggs until they are cooked through, then mix them with the vegetables.
  6. Add the grated cauliflower rice to the wok and stir-fry for around 5-7 minutes until it is cooked and slightly crispy.
  7. Add the soy sauce, oyster sauce, sesame oil, salt, and pepper to the wok and stir-fry until everything is well combined and heated through.
  8. Garnish with chopped green onions if desired and serve hot.

  • If you want to add some more protein to this dish, you can add cooked chicken, shrimp, or tofu.
