Method
- Wash the rice in water and soak it for 30 minutes.
- Drain the water and keep the rice aside.
- In a heavy-bottomed pan, heat the milk and bring it to a boil.
- Add the soaked rice to the milk and stir well.
- Crush the green cardamom pods and add them to the pan.
- Add a pinch of saffron strands to the pan.
- Simmer the rice and milk mixture on low heat for about 30-40 minutes, stirring occasionally. The rice should be cooked well and the mixture should have thickened.
- Add sugar to the pan and stir well. Cook for another 5-10 minutes on low heat.
- Add chopped almonds, chopped pistachios, and raisins to the pan and mix well.
- Turn off the heat and let the kheer cool down to room temperature.
