Ingredients

Method

  1. Wash the rice in water and soak it for 30 minutes.
  2. Drain the water and keep the rice aside.
  3. In a heavy-bottomed pan, heat the milk and bring it to a boil.
  4. Add the soaked rice to the milk and stir well.
  5. Crush the green cardamom pods and add them to the pan.
  6. Add a pinch of saffron strands to the pan.
  7. Simmer the rice and milk mixture on low heat for about 30-40 minutes, stirring occasionally. The rice should be cooked well and the mixture should have thickened.
  8. Add sugar to the pan and stir well. Cook for another 5-10 minutes on low heat.
  9. Add chopped almonds, chopped pistachios, and raisins to the pan and mix well.
  10. Turn off the heat and let the kheer cool down to room temperature.
