Method

- Dust a clean work surface with rice flour. Knead the dough for a few minutes until it becomes smooth and elastic.

- Roll out the other half of the dough into a thin sheet, about 1/16 inch thick.

- Place a small spoonful of filling in the center of each square.
- Moisten the edges of the square with a little water and fold it over into a triangle shape.
- Press the edges together to seal the wonton.
- Repeat with the remaining dough and filling.
- Bring a large pot of water to a boil.
- Add the wontons to the boiling water, one at a time, and cook for 2-3 minutes or until they float to the surface.
- Remove the wontons with a slotted spoon and transfer them to a plate.
- Serve hot with your favorite dipping sauce.

- If you don't have tapioca starch, you can use cornstarch instead.
