Polish rice cake, also known as sernik ryżowy or sernik na zimno, is a traditional dessert in Poland. It is a creamy and delicate cheesecake made with rice and is perfect for any special occasion. Ingredient

For the crust: - 1 1/2 cups of graham cracker crumbs - 1/4 cup of granulated sugar - 6 tablespoons of unsalted butter, melted For the filling: - 1 cup of white rice - 2 cups of water - 1/2 teaspoon of salt - 3 packages of cream cheese, softened - 1 cup of granulated sugar - 1 tablespoon of vanilla extract - 1/2 cup of heavy cream - 4 large eggs, lightly beaten

- 9-inch springform pan - Mixing bowls - Measuring cups and spoons - Whisk - Large pot - Oven

Method

1. Preheat the oven to 325°F and grease a 9-inch springform pan with butter. 2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until they are well mixed. 3. Press the mixture into the bottom of the springform pan and set aside. 4. In a large pot, combine the rice, water, and salt. Bring to a boil, then reduce the heat to low and simmer for 18-20 minutes or until the rice is tender. 5. Drain any excess water from the rice and set it aside to cool. 6. In a mixing bowl, beat the cream cheese until it is smooth. 7. Add the sugar and vanilla extract and mix well. 8. Gradually add the heavy cream and mix until it is well combined. 9. Add the cooled rice and mix well. 10. Add the eggs and mix until they are well incorporated. 11. Pour the mixture onto the crust in the springform pan. 12. Bake for 1 hour and 30 minutes or until the center is set. 13. Allow the cake to cool to room temperature and then chill in the refrigerator for at least 4 hours or overnight. 14. Serve chilled.

- This dessert can be made a day in advance and stored in the refrigerator until ready to serve. - You can garnish the cake with fresh fruit or whipped cream before serving. - Make sure to use softened cream cheese to avoid lumps in the filling.
