- 1 onion, chopped

- 1 tsp. paprika
- 1/2 tsp. cinnamon
- 1/4 tsp. cayenne pepper
- 1/4 cup olive oil
- Salt and pepper, to taste
- 2 tbsp. chopped fresh parsley

Method
- Rinse the rice in a fine mesh strainer and set aside.
- Heat the olive oil in a medium skillet over medium heat.

- Add the cumin, coriander, paprika, cinnamon, and cayenne pepper and stir to combine.
- Add the rice and stir to coat the grains in the spice mixture.
