  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 bay leaf

  • A measuring cup

Method

  1. Rinse the rice until the water runs clear.
  2. In a medium-sized pot, heat the vegetable oil over medium heat.
  3. Add the minced garlic and diced onion and sauté until the onion is translucent.
  4. Add the turmeric powder, garlic powder, salt, black pepper, and bay leaf to the pot and stir well.
  5. Add the rinsed rice to the pot and stir until the grains are coated in the spice mixture.
  6. Add the water and coconut milk to the pot and stir well.
  7. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  8. Simmer the rice for 18-20 minutes, or until the liquid has been absorbed and the rice is fluffy and cooked through.
  9. Remove the bay leaf from the pot and fluff the rice with a fork.
  10. Transfer the rice to a serving bowl and garnish with chopped green onions or cilantro, if desired.

Notes
