- 2 cloves garlic, minced
- 1/2 cup frozen peas
- 1/2 pound ground beef
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs
- Vegetable oil, for frying
- Salt and pepper, to taste
Equipment
- Large saucepan
- Large skillet
- Large mixing bowl
- Medium mixing bowl
- Slotted spoon
- Deep fryer or heavy-bottomed pot
Method
- In a large saucepan, bring the chicken broth to a simmer over medium heat.
- Add the Arborio rice and stir well. Cover and let it cook for about 20 minutes, until the rice has absorbed all the liquid and is cooked through.
- While the rice is cooking, heat some oil in a large skillet over medium heat.
- Add the diced onion and minced garlic and cook for a few minutes until the onion is translucent.
- Add the ground beef and cook until it's browned and cooked through.
- Add the frozen peas and stir well. Cook for about 5 minutes until the peas are tender.
- Once the rice is cooked, add the beef mixture, Parmesan cheese, and beaten eggs. Stir well until the mixture is fully combined.
- Let the mixture cool for at least 30 minutes, until it's easy to handle with your hands.
- Take a small amount of the mixture and roll it into a ball, about the size of a golf ball.
- In a medium mixing bowl, mix together the flour and breadcrumbs.
- Roll the rice balls in the breadcrumb mixture until they are fully coated.
- In a deep fryer or heavy-bottomed pot, heat the vegetable oil to 375°F.
- Using a slotted spoon, carefully lower the rice balls into the hot oil and fry until they are golden brown and crispy, about 3-4 minutes.
- Remove the rice balls from the oil using a slotted spoon and place them on a paper towel-lined plate to drain off any excess oil.
- Serve the rice balls hot with your favorite dipping sauce.
Notes
Arancini can be made in advance and stored in the refrigerator or freezer until you're ready to fry them. Just be sure to thaw them completely before frying.Nutrition Info

Recipe Tips
- Make sure the oil is hot enough before frying the rice balls. If the oil is not hot enough, the rice balls will absorb too much oil and become greasy.
- Be sure to let the rice mixture cool before rolling it into balls. This will make it easier to handle and shape the balls.
- For an extra cheesy flavor, you can add some shredded mozzarella cheese to the rice mixture.
- You can also experiment with different fillings, such as ham and cheese, spinach and ricotta, or even seafood.
Enjoy!
