For the rice:- 2 cups of jasmine rice
- 2 cups of coconut milk
- 2 cups of water
- 1 tsp of salt
- 1 cucumber, diced
- 1 red onion, diced
- 1 red bell pepper, diced
- 1/2 cup of fresh cilantro, chopped
- 1/2 cup of fresh mint, chopped
- 1/2 cup of roasted peanuts, chopped
- 3 tbsp of lime juice
- 2 tbsp of honey
- 1 tbsp of soy sauce
- 1 clove of garlic, minced
- 1/4 tsp of red pepper flakes
- 1/4 cup of olive oil

- A large mixing bowl
- A whisk or fork
- A sharp knife

Method
- Rinse the rice in a fine-mesh sieve and place it in a large saucepan with the coconut milk, water, and salt. Bring to a boil over high heat, then reduce the heat to low and cover the pan.
- Cook the rice for about 18-20 minutes, or until the liquid is fully absorbed and the rice is fluffy and tender.
- While the rice is cooking, prepare the salad ingredients and dressing.
- In a large mixing bowl, combine the cucumber, red onion, red bell pepper, cilantro, and mint.
- In a separate bowl, whisk together the lime juice, honey, soy sauce, garlic, red pepper flakes, and olive oil until smooth.
- Once the rice is cooked, fluff it with a fork and let it cool for a few minutes.
- Add the rice to the mixing bowl with the vegetables and herbs, and toss everything together until well combined.
- Pour the dressing over the salad and toss again until everything is evenly coated.
