- 1 cup rice

- 2-3 dried red chillies
- 10-12 curry leaves
- 1/4 cup peanuts
- 1/4 cup chopped coriander leaves
- 2 tbsp lemon juice
- 1/2 tsp turmeric powder
- Salt to taste

Method
- Cook the rice according to the package instructions and keep it aside.
- Heat oil in a frying pan and add mustard seeds, cumin seeds, asafoetida, dried red chillies, and curry leaves. Fry for a minute.
- Add peanuts and fry until they turn golden brown.
- Add turmeric powder and salt and mix well.
- Add the cooked rice and mix well.
- Add lemon juice and mix well.
- Add chopped coriander leaves and mix well.
- Turn off the heat and cover the pan for 2-3 minutes.
- Garnish with some more coriander leaves and serve hot.
Notes
- You can add more or less lemon juice depending on your taste.
- You can also add some grated coconut to this dish to give it a more authentic South Indian flavor.
- This dish can be served with some raita or yogurt on the side.
