Description

Dirty rice is a classic Cajun dish that gets its name from the fact that the rice is "dirty" from being cooked with chicken liver and spices. This gluten-free version uses chicken and sausage as the meat components and is packed with flavor from the addition of bell peppers, onion, celery, and Cajun spices. It's a hearty and satisfying meal that is perfect for any weeknight dinner.

Notes

If you don't have Andouille sausage, you can use any type of smoked sausage instead. You can also use ground pork or beef instead of ground chicken if you prefer. This recipe is also delicious with the addition of shrimp, so feel free to experiment with different proteins to find your favorite combination.

Recipe Tips

To save time, you can use pre-cooked rice from a package or leftover rice from a previous meal. This recipe can also be made ahead of time and reheated before serving. If you're short on time, you can use pre-cut vegetables from the grocery store instead of dicing them yourself. Lastly, feel free to adjust the amount of Cajun seasoning to your liking - if you prefer a milder flavor, reduce the amount, or increase it for a spicier dish.
