- 1 lb. ground pork
- 1 tbsp. olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tsp. dried oregano
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup tomato sauce
- 1 package of empanada dough
- 1 egg, beaten

Method
- Preheat oven to 375°F.
- In a large skillet, heat olive oil over medium-high heat.
- Add onion, garlic, red and green bell peppers, dried oregano, cumin, paprika, salt, and black pepper. Cook until vegetables are tender, about 5 minutes.
- Add ground pork and cook until browned, breaking up any large chunks with a spoon, about 10 minutes.
- Add tomato sauce and stir to combine. Remove from heat and set aside.
- Roll out the empanada dough to 1/8-inch thickness.
- Using a cookie cutter or a small bowl, cut out circles of dough, about 4 inches in diameter.
- Place a spoonful of the pork mixture on one half of each dough circle.
- Brush the edges of the dough with beaten egg and fold the other half of the dough over, forming a half-circle shape.
- Use a fork to crimp the edges of the dough, sealing the empanadas closed.
- Place the empanadas on a baking sheet lined with parchment paper.
- Brush the tops of the empanadas with beaten egg.
- Bake for 20-25 minutes, or until golden brown.
