Ingredients

  • 1 lb. ground pork
  • 1 tbsp. olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tsp. dried oregano
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup tomato sauce
  • 1 package of empanada dough
  • 1 egg, beaten

Method

  1. Preheat oven to 375°F.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add onion, garlic, red and green bell peppers, dried oregano, cumin, paprika, salt, and black pepper. Cook until vegetables are tender, about 5 minutes.
  4. Add ground pork and cook until browned, breaking up any large chunks with a spoon, about 10 minutes.
  5. Add tomato sauce and stir to combine. Remove from heat and set aside.
  6. Roll out the empanada dough to 1/8-inch thickness.
  7. Using a cookie cutter or a small bowl, cut out circles of dough, about 4 inches in diameter.
  8. Place a spoonful of the pork mixture on one half of each dough circle.
  9. Brush the edges of the dough with beaten egg and fold the other half of the dough over, forming a half-circle shape.
  10. Use a fork to crimp the edges of the dough, sealing the empanadas closed.
  11. Place the empanadas on a baking sheet lined with parchment paper.
  12. Brush the tops of the empanadas with beaten egg.
  13. Bake for 20-25 minutes, or until golden brown.
  14. Serve hot and enjoy!

Notes

Empanadas can be made ahead of time and stored in the freezer for up to 3 months. To reheat, simply place in a preheated oven at 375°F for 10-15 minutes.
