- 1 pound ground beef
- 1 onion, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes, undrained

- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 2 cups white rice, rinsed and drained
- Green onions, chopped (for garnish)

Method
- Set the Instant Pot to the sauté function and add the ground beef. Cook until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, green bell pepper, and garlic to the Instant Pot. Cook for a few minutes until the vegetables are softened.
- Add the chicken broth, diced tomatoes, paprika, thyme, salt, black pepper, and cayenne pepper to the Instant Pot. Stir to combine.
- Add the rinsed and drained rice to the Instant Pot. Stir to combine.
- Close the Instant Pot and set it to the rice setting. Cook for 12 minutes.
- Allow the Instant Pot to release pressure naturally for 10 minutes, then quick release any remaining pressure.
- Open the Instant Pot and stir the rice. Let it sit for a few minutes to absorb any remaining liquid.
- Garnish with chopped green onions and serve.
Notes
This recipe can easily be made vegetarian by omitting the ground beef and using vegetable broth instead of chicken broth. You can also customize the spices to your liking - if you prefer a milder dish, reduce the amount of cayenne pepper.Nutrition Info
