Ingredients

For the Ghee Rice:
  • 1 cup basmati rice
  • 2 cups water
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 2-3 cloves
  • 1 cinnamon stick
  • 1 bay leaf
  • Salt to taste
For the Kurma:
  • 1 cup mixed vegetables (carrots, potatoes, beans, peas)
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 inch ginger, grated
  • 3-4 garlic cloves, minced
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 cup coconut milk
  • 2 tbsp oil
  • Coriander leaves for garnish
  • Salt to taste

Equipment

  • A deep-bottomed pan
  • A pressure cooker
  • A chopping board
  • A sharp knife
  • A ladle

Method

For the Ghee Rice:
  1. Rinse the basmati rice in cold water until the water runs clear. Drain the water and keep the rice aside.
  2. Heat ghee in a deep-bottomed pan. Add cumin seeds, cloves, cinnamon stick, and bay leaf. Saute for a few seconds.
  3. Add the rinsed rice to the pan and saute for a minute. Add water and salt to taste.
  4. Cover the pan with a lid and cook on low heat for around 15-20 minutes or until the rice is fully cooked.
  5. Once the rice is cooked, fluff it up with a fork and keep it aside.
For the Kurma:
  1. Heat oil in a pressure cooker. Add cumin seeds and wait for them to splutter.
  2. Add chopped onions, ginger, and garlic. Saute until the onions turn translucent.
  3. Add chopped tomatoes and saute until they turn mushy.
  4. Add turmeric powder, coriander powder, and red chili powder. Mix well and saute for a minute.
  5. Add mixed vegetables and salt to taste. Mix well and cook for 2-3 minutes.
  6. Add coconut milk and mix well. Add water if necessary.
  7. Cover the pressure cooker with a lid and cook for around 3-4 whistles.
  8. Once the pressure is released, open the lid and garnish with coriander leaves.

Notes

  • You can adjust the amount of spices as per your taste.
  • You can use any vegetables of your choice in the kurma.
  • Make sure to fluff up the rice with a fork to avoid clumps.
  • You can add a dollop of ghee on top of the rice for extra flavor.
