Method

1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in cold water for at least 2 hours or overnight. 2. Stir-fry for 2-3 minutes or until the rice is evenly coated with the sauce. 8. Add 1 1/2 cups of water to the wok and bring to a boil. Reduce the heat to low and cover the wok. Simmer for 15-20 minutes or until the rice is cooked through. 9. Remove the wok from the heat and allow the rice to cool slightly. 10. Cut the lotus leaves into large squares and place them in a bowl of hot water for 5 minutes to soften them. 11. Lay a lotus leaf square flat on a work surface, shiny side down. Spoon a portion of the rice mixture onto the center of the lotus leaf. 12. Fold the lotus leaf around the rice, tucking in the sides to form a neat packet. Tie the packet with kitchen twine. 13. Repeat with the remaining rice and lotus leaves. 14. Place the lotus leaf packets in a steamer basket or rice cooker and steam for 15-20 minutes or until heated through. 15. Serve hot, garnished with sliced scallions.
