- 2 cups Basmati Rice
- 2 tablespoons Ghee
- 1 tablespoon Oil
- 1 Bay Leaf
- 4-5 Cloves
- 1-inch Cinnamon Stick
- 2 Cardamom Pods
- 1 Onion, thinly sliced
- 1 Green Chili, slit
- 1 Carrot, chopped
- 1/2 cup French Beans, chopped
- 1/4 cup Green Peas
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Garam Masala Powder
- Salt to taste
- 3 cups Water
- 2 tablespoons Coriander Leaves, chopped

Method
- Wash the Basmati Rice and soak it in water for around 20 minutes.
- Heat ghee and oil in a pressure cooker and add bay leaf, cloves, cinnamon stick, and cardamom pods.
- Add onions and green chili and sauté until they turn translucent.
- Add chopped carrots, French beans, and green peas and sauté for 5-7 minutes.
- Add turmeric powder, garam masala powder, and salt and mix well.
- Add soaked rice and mix gently.
- Add water and mix well.
- Cover the pressure cooker with a lid and pressure cook for 2 whistles on high flame.
- Reduce the flame to low and cook for another 5 minutes.
- Switch off the flame and let the pressure release naturally.
- Open the lid and garnish with chopped coriander leaves.
- Kerala Pulao Rice is ready to serve.
Notes
- You can add any vegetables of your choice.
- Adjust the spice level as per your taste.
- You can also add fried cashews and raisins to enhance the flavor.
