For the curry:- 1 pound beef chuck roast, cut into bite-sized pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, chopped
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 tablespoons curry powder
- 2 tablespoons ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 4 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
- 2 cups Japanese short-grain rice
- 2 1/2 cups water

Method
1. Heat the vegetable oil in a large pot over medium-high heat. 2. Add the beef and cook until browned on all sides. 3. Add the onion and garlic and cook until the onion is translucent. 4. Add the curry powder and cook for 1-2 minutes until fragrant. 5. Add the carrots and potatoes and stir to coat with the curry powder. 6. Add the ketchup, Worcestershire sauce, soy sauce, honey, beef broth, and bay leaves. 7. Bring to a boil, reduce heat to low, cover, and simmer for 1 hour. 8. While the curry is cooking, rinse the rice in cold water until the water runs clear. 9. Add the rice and water to a rice cooker and cook according to the manufacturer's instructions. 10. Once the curry is done simmering, season with salt and pepper to taste. 11. Serve the curry over the rice.Notes
