Ingredients

  • 2 chicken breasts
  • 1 onion
  • 1 red pepper
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of allspice
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried thyme
  • 1 teaspoon of ground cinnamon
  • 1 scotch bonnet chili
  • 1 tablespoon of honey
  • 1 tablespoon of soy sauce
  • 1 can of kidney beans
  • 1 cup of rice
  • 2 cups of chicken stock
  • Salt and pepper to taste

Equipment

  • Cutting board
  • Sharp knife
  • Wooden spoon

Method

  1. Cut the chicken breasts into small pieces and set them aside.
  2. Chop the onion and red pepper into small pieces and mince the garlic.
  3. Heat the olive oil in a large pot over medium heat.
  4. Add the chicken pieces and cook until browned on all sides.
  5. Add the onions, red pepper, and garlic and cook for 5 minutes or until softened.
  6. Add the allspice, smoked paprika, dried thyme, and ground cinnamon and cook for another 2 minutes.
  7. Add the scotch bonnet chili (whole) and stir in the honey and soy sauce.
  8. Add the kidney beans (undrained) and uncooked rice to the pot and stir until combined.
  9. Add the chicken stock and stir everything together.
  10. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  11. Cook for 20-25 minutes or until the rice is tender and the liquid has been absorbed.
  12. Remove the scotch bonnet chili before serving.

Notes

  • If you can't find scotch bonnet chili, you can substitute with habanero pepper.
  • If you want a milder version, remove the seeds and membrane of the chili before adding it to the pot.
  • You can serve the jerk rice with a side of coleslaw or sliced avocado.
