Ingredients

  • A heavy-bottomed pan
  • A ladle
  • A mixing spoon

Method

  1. Wash the rice thoroughly and soak it in water for 30 minutes.
  2. After 30 minutes, drain the water and set the rice aside.
  3. In a heavy-bottomed pan, heat the milk on medium flame. Stir occasionally to prevent it from sticking to the bottom.
  4. Add the soaked rice to the milk and stir well.
  5. Let the rice cook in the milk on medium-low flame for 30-35 minutes. Stir occasionally to prevent it from sticking to the bottom.
  6. Add sugar and continue stirring until it dissolves completely.
  7. Add cardamom powder and saffron strands. Mix well.
  8. Continue cooking on low flame for another 5-10 minutes or until the rice is cooked and the kheer has thickened to your desired consistency.
  9. Turn off the flame and let the kheer cool down slightly.
  10. Garnish with chopped almonds and pistachios.
  11. Refrigerate for a few hours before serving.

  • Stirring the kheer occasionally is important to prevent it from sticking to the bottom of the pan and burning.
  • You can adjust the amount of sugar used according to your taste preference.
  • If you prefer a thinner consistency, you can add more milk to the kheer.
