Method

1. Rinse the rice thoroughly and set it aside. 2. In a large pot, heat the vegetable oil over medium heat. 3. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent. 4. Add the chopped tomatoes and red bell pepper and cook for another 3-4 minutes until they become soft. 5. Add the tomato paste, salt, black pepper, chili powder, curry powder, and dried rosemary. Stir well to combine and cook for another 2-3 minutes. 6. Add the rice to the pot and stir to coat it with the tomato mixture. 7. Add the chicken broth to the pot and stir well. 8. Add the chicken pieces to the pot and stir gently to combine. 9. Cover the pot with a lid and let it simmer over low heat for approximately 30-35 minutes or until the rice is cooked and the chicken is tender. 10. Once the rice is cooked, remove the pot from the heat and let it sit for 5-10 minutes before serving.
