- 1/2 cup Urad Dal

- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 teaspoon Baking Soda
- 1 tablespoon Lemon Juice
- 2 tablespoons Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Sesame Seeds
- 1/4 cup Water
- A few Curry Leaves
- A pinch of Asafoetida

Method
Step 1: Soak the rice and urad dal
In a bowl, add 1 cup of rice and 1/2 cup of urad dal. Rinse them well and soak them in water for at least 4 hours.Step 2: Make the batter
After the rice and urad dal are soaked, drain the water and add them to a blender. Add 1/2 cup of yogurt, 1 tablespoon of ginger-green chili paste, 1/2 teaspoon of turmeric powder, 1 teaspoon of salt, and 1 teaspoon of sugar. Add a little water and blend it into a smooth batter.Step 3: Add the baking soda and lemon juice
Add 1 teaspoon of baking soda to the batter and mix well. Then add 1 tablespoon of lemon juice and mix well.Step 4: Steam the batter
Grease a steaming tray with oil and pour the batter into it. Steam it for around 20-25 minutes or until a toothpick comes out clean.Step 5: Temper the dhokla
In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds, 1 teaspoon of sesame seeds, a few curry leaves, and a pinch of asafoetida. Let it splutter for a few seconds.Step 6: Add water to the tempering
Add 1/4 cup of water to the tempering and let it boil for a minute.Step 7: Pour the tempering over the dhokla
After the dhokla is steamed, cut it into pieces and pour the tempering over it.Notes
