Ingredients

The ingredients you will need for this recipe are:
  • 1 cup Rice

  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 1 teaspoon Baking Soda
  • 1 tablespoon Lemon Juice
  • 2 tablespoons Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Sesame Seeds
  • 1/4 cup Water
  • A few Curry Leaves
  • A pinch of Asafoetida

Method

Step 1: Soak the rice and urad dal

In a bowl, add 1 cup of rice and 1/2 cup of urad dal. Rinse them well and soak them in water for at least 4 hours.

Step 2: Make the batter

After the rice and urad dal are soaked, drain the water and add them to a blender. Add 1/2 cup of yogurt, 1 tablespoon of ginger-green chili paste, 1/2 teaspoon of turmeric powder, 1 teaspoon of salt, and 1 teaspoon of sugar. Add a little water and blend it into a smooth batter.

Step 3: Add the baking soda and lemon juice

Add 1 teaspoon of baking soda to the batter and mix well. Then add 1 tablespoon of lemon juice and mix well.

Step 4: Steam the batter

Grease a steaming tray with oil and pour the batter into it. Steam it for around 20-25 minutes or until a toothpick comes out clean.

Step 5: Temper the dhokla

In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of mustard seeds, 1 teaspoon of sesame seeds, a few curry leaves, and a pinch of asafoetida. Let it splutter for a few seconds.

Step 6: Add water to the tempering

Add 1/4 cup of water to the tempering and let it boil for a minute.

Step 7: Pour the tempering over the dhokla

After the dhokla is steamed, cut it into pieces and pour the tempering over it.

Notes

Make sure to soak the rice and urad dal for at least 4 hours to get a smooth batter. You can add more water to the batter if it is too thick. The tempering can be adjusted according to your taste.
