- 1 pound of prawns, peeled and deveined
- 1 pound of flat rice noodles
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 tablespoon of oyster sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sugar
- 1 teaspoon of sesame oil
- Salt and pepper to taste

Method
- Soak the flat rice noodles in a bowl of warm water for 10-15 minutes until they are soft and pliable.
- While the noodles are soaking, heat up the wok or frying pan over medium-high heat and add the vegetable oil.
- Add the minced garlic and stir-fry until fragrant.
- Add the prawns and cook until they turn pink and are cooked through. Remove the prawns from the wok and set aside.
- Add the onion, red and green bell peppers and stir-fry until the vegetables are tender and slightly caramelized.
- Drain the noodles and add them to the wok or frying pan, stirring to combine with the vegetables.
- Add the oyster sauce, soy sauce, sugar and sesame oil to the wok and stir everything together until the noodles are well coated.
- Return the cooked prawns to the wok and stir everything together until heated through.
- Season with salt and pepper to taste.
