- 1 teaspoon of turmeric powder
- 1 teaspoon of cinnamon powder
- 4 cups of water or chicken stock
- Salt and pepper to taste
- Optional: 1 cup of peas and carrots
Equipment
- Large pot with a lid
- Large spoon or spatula
- Knife and cutting board
Method
- Wash the rice in cold water and drain.
- In a large pot, heat the oil over medium heat.
- Add the chopped onions and cook until they are soft and translucent for about 5 minutes.
- Add the minced garlic and grated ginger and cook for another minute.
- Add the cumin seeds, coriander seeds, turmeric powder, and cinnamon powder and mix well with the onion mixture.
- Add the rice to the pot and stir well so that the rice is coated with the spice mixture.
- Add the water or chicken stock to the pot and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes.
- If using peas and carrots, add them to the pot after 20 minutes and cook for an additional 5 minutes.
- Remove the pot from the heat and let it sit for 5 minutes.
- Fluff the rice with a fork and serve.
