Cooking this dish will take approximately 2 hours and 30 minutes.Ingredients
- 1 pound red kidney beans, soaked overnight and drained
- 1 pound Andouille sausage, sliced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 4 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 6 cups chicken broth
- 1/2 cup chopped fresh parsley
- Salt and pepper to taste
- Hot cooked rice for serving
Equipment
- Dutch oven or heavy pot
- Wooden spoon or spatula
- Measuring cups and spoons
- Knife and cutting board
Method
- Heat a Dutch oven over medium heat. Add the sausage and cook until browned on both sides, about 5 minutes. Remove the sausage from the pot and set aside.
- Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
- Add the Cajun seasoning, thyme, and cayenne pepper to the pot and stir to combine.
- Add the beans and chicken broth to the pot and stir well.
- Bring the mixture to a boil, then reduce heat to low and simmer, partially covered, for 2 hours or until the beans are tender.
- Stir the sausage and parsley into the pot and cook for an additional 30 minutes.
- Season with salt and pepper to taste.
- Remove from heat and serve over hot cooked rice.
Notes
If you don't have Andouille sausage, you can substitute another spicy sausage, such as chorizo or hot Italian sausage. You can also use canned kidney beans if you don't have time to soak and cook dried beans.Nutrition Info
