Description

If you're a fan of Cajun cuisine, you've probably heard of the famous red beans and rice dish. HWY 61 Roadhouse, a popular restaurant in St. Louis, has perfected their own version of this classic dish, and lucky for us, they're willing to share the recipe! This hearty and flavorful meal is perfect for a family dinner or as a dish to bring to a potluck.

Prep Time

Preparation for this dish will take about 15 minutes.

Cook Time

Cooking this dish will take approximately 2 hours and 30 minutes.

Ingredients

  • 1 pound red kidney beans, soaked overnight and drained
  • 1 pound Andouille sausage, sliced
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 6 cups chicken broth
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste
  • Hot cooked rice for serving

Equipment

  • Dutch oven or heavy pot
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board

Method

  1. Heat a Dutch oven over medium heat. Add the sausage and cook until browned on both sides, about 5 minutes. Remove the sausage from the pot and set aside.
  2. Add the onion, bell pepper, and garlic to the pot and cook until softened, about 5 minutes.
  3. Add the Cajun seasoning, thyme, and cayenne pepper to the pot and stir to combine.
  4. Add the beans and chicken broth to the pot and stir well.
  5. Bring the mixture to a boil, then reduce heat to low and simmer, partially covered, for 2 hours or until the beans are tender.
  6. Stir the sausage and parsley into the pot and cook for an additional 30 minutes.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve over hot cooked rice.

Notes

If you don't have Andouille sausage, you can substitute another spicy sausage, such as chorizo or hot Italian sausage. You can also use canned kidney beans if you don't have time to soak and cook dried beans.

Recipe Tips

One important step in this recipe is soaking the beans overnight. This helps to reduce cooking time and also makes the beans easier to digest. If you forget to soak the beans, you can try a quick soak method by bringing them to a boil in a pot of water, then letting them sit for an hour before draining and using in the recipe. Another tip is to make sure you don't overcook the beans. They should be tender but still hold their shape. If they become too mushy, the dish will lose its texture and become less appetizing. Finally, don't be afraid to adjust the seasoning to your taste. If you like your food spicier, add more cayenne pepper or hot sauce. If you prefer a milder flavor, reduce the amount of Cajun seasoning. This recipe is versatile and can be customized to suit your preferences.
