- 1 cup besan (chickpea flour)
- 1 cup rice flour
- 1 teaspoon red chili powder
- 1 teaspoon cumin seeds
- 1/2 teaspoon ajwain (carom seeds)
- 1/4 teaspoon hing (asafoetida)
- 2 tablespoons hot oil
- Salt to taste
- Water as required
- Oil for deep frying

- Murukku maker (chakli press)
- Deep frying pan
- Slotted spoon
Method
- In a mixing bowl, add besan, rice flour, red chili powder, cumin seeds, ajwain, hing, and salt. Mix well.
- Heat 2 tablespoons of oil until hot and pour it into the flour mixture. Mix well.
- Add water little by little and knead the mixture into a smooth dough. The consistency of the dough should be soft and pliable.
- Take the murukku maker and fit it with the star-shaped plate. Grease the murukku maker with a little oil.
- Take a small portion of the dough and fill the murukku maker with it. Close the lid and press the dough out into a spiral shape onto a greased surface.
- Heat oil in a deep frying pan. Once the oil is hot, gently slide the murukku into the oil and fry until golden brown on both sides.
- Remove the murukku from the oil using a slotted spoon and place it on a paper towel to remove excess oil.
- Repeat the process with the remaining dough.
- Once the murukku has cooled down, store it in an airtight container.
Notes
- You can adjust the amount of red chili powder according to your taste.
- Make sure the oil is hot enough before frying the murukku, otherwise it will absorb too much oil.
- If the murukku breaks while frying, it could be because the dough is too dry or the oil is not hot enough.
