Method
Here are the steps to make MTR Rice Idli:- Wash the idli rice and urad dal separately and soak them in water overnight along with fenugreek seeds.
- Drain the water and grind the soaked rice and urad dal separately into a fine batter using a grinder or blender. Add water as required to get a smooth and fluffy batter.
- Mix both the batters together in a large bowl and add salt. Mix well and leave the batter to ferment for 6-8 hours or overnight in a warm place.
- After the batter has fermented, grease the idli moulds with oil and pour the batter into the moulds, filling them to about 3/4th full.
- Place the idli moulds in an idli cooker or steamer and steam for 15-20 minutes or until a toothpick inserted in the centre of the idli comes out clean.
- Remove the idli moulds from the cooker and let them cool for a few minutes before removing the idlis from the moulds using a spoon.
- Serve hot with coconut chutney and sambar.

- The key to making soft and fluffy idlis is in the fermentation process. Make sure the batter is left to ferment in a warm place for at least 6-8 hours or overnight for best results.
- If you live in a cold place, you can keep the batter in an oven with the light on or in a warm place like near a heater or in a warm cupboard.
- You can also add grated carrots or chopped coriander to the batter to make it more nutritious and flavourful.
