- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup chopped cilantro
Equipment
- Large mixing bowl
- Frying pan
- Large pot with a lid
- Wooden spoon
- Measuring cups and spoons
- Cutting board
- Sharp knife
Method
- In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, garlic powder, onion powder, chili powder, cumin, salt, and black pepper. Mix well with your hands until all ingredients are fully incorporated.
- Form the meat mixture into small balls, about 1 inch in diameter.
- Heat the olive oil in a frying pan over medium heat. Add the meatballs and cook for 8-10 minutes, rotating them frequently, until they are browned on all sides.
- While the meatballs are cooking, prepare the rice. In a large pot with a lid, sauté the onions and garlic in a little bit of olive oil until they are soft and translucent. Add the rice and stir until it is coated in the oil.
- Add the chicken broth, canned tomatoes, and a pinch of salt to the pot. Bring to a boil, then reduce the heat to low and cover the pot with a lid. Cook for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Once the meatballs are cooked, add them to the pot with the rice. Stir everything together and sprinkle with chopped cilantro.
- Serve hot with avocado, salsa, and sour cream on the side.
