Method

  1. Turn on your instant pot and select the sauté function.
  2. Add the olive oil, chopped onion, and red bell pepper to the pot and sauté for 2-3 minutes.
  3. Add the minced garlic and sauté for another 30 seconds.
  4. Add the rice to the pot and stir to combine with the vegetables.
  5. Add the can of diced tomatoes, chicken or vegetable broth, paprika, cumin, chili powder, salt, and black pepper to the pot and stir well.
  6. Close the instant pot lid and set the pressure valve to sealing.
  7. Select the manual or pressure cook function and set the timer for 10 minutes.
  8. After 10 minutes, allow the instant pot to naturally release pressure for 5 minutes before quick-releasing any remaining pressure.
  9. Open the instant pot lid and fluff the rice with a fork.
  10. Serve the Spanish rice hot and enjoy!
