- 1 pound of dried red beans
- 1 onion, chopped

- 1 teaspoon of dried oregano
- 1 teaspoon of smoked paprika
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of cayenne pepper
- 1 bay leaf
- 1 pound of sausage, sliced
- 6 cups of water
- 2 cups of cooked rice
- Chopped green onions, for garnish

Method
- Rinse the red beans and place them in the pressure cooker.
- Add the chopped onion, celery, green bell pepper, garlic, thyme, oregano, smoked paprika, salt, black pepper, cayenne pepper, bay leaf, and sausage to the pressure cooker.
- Pour in the water and stir to combine all the ingredients.
- Place the lid on the pressure cooker and set the valve to sealing.
- Cook on high pressure for 30 minutes.
- Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
- Remove the bay leaf and discard.
- Serve the red beans and sausage over cooked rice and garnish with chopped green onions.
