Ingredients

  • 6 cups of water
  • 2 cups of cooked rice
  • Chopped green onions, for garnish

Method

  1. Rinse the red beans and place them in the pressure cooker.
  2. Add the chopped onion, celery, green bell pepper, garlic, thyme, oregano, smoked paprika, salt, black pepper, cayenne pepper, bay leaf, and sausage to the pressure cooker.
  3. Pour in the water and stir to combine all the ingredients.
  4. Place the lid on the pressure cooker and set the valve to sealing.
  5. Cook on high pressure for 30 minutes.
  6. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  7. Remove the bay leaf and discard.
