- 1 lb beef sirloin, sliced into thin strips

- 1 tbsp vegetable oil
- 1 carrot, julienned
- 1 cucumber, julienned
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh mint leaves
- 12 rice paper wrappers

- Bowl of warm water
Method
- In a large bowl, mix together the lemongrass, garlic, fish sauce, soy sauce, honey, and vegetable oil.
- Add the sliced beef to the bowl and toss to coat with the marinade. Let it marinate for at least 20 minutes or up to 2 hours in the fridge.
- While the beef is marinating, prepare the veggies by julienning the carrot and cucumber and washing the cilantro and mint leaves.
- Preheat the grill or grill pan to medium-high heat.

- To assemble the rice paper rolls, dip one sheet of rice paper into the bowl of warm water for a few seconds until it softens and becomes pliable.
- Place the softened rice paper on a large plate or tray and add a few strips of beef, a few pieces of carrot and cucumber, and a few leaves of cilantro and mint on top.
- Fold the sides of the rice paper inwards and then tightly roll it up from the bottom to the top.
- Repeat with the remaining rice paper sheets and filling ingredients.
- Serve the rice paper rolls immediately with a dipping sauce of your choice.
