The ingredients required for making Gujarati rice dhokla are:- 1 cup rice flour
- 1/2 cup split black gram (urad dal) flour
- 1/2 cup yogurt
- 1 teaspoon ginger paste
- 1 teaspoon green chili paste
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon fruit salt (eno)
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- 6-7 curry leaves
- 2 cups water

The equipment required for making Gujarati rice dhokla are:- Steaming pot or cooker
- Large mixing bowl
- Small pan for tempering

Method
1. In a large mixing bowl, add rice flour, split black gram flour, yogurt, ginger paste, green chili paste, sugar and salt. Mix well. 2. Add water gradually and whisk until the batter is smooth and lump-free. 3. Add fruit salt (eno) to the batter and mix gently. 4. Grease a steaming tray with oil and pour the batter into it. 5. Steam the dhokla for around 15-20 minutes or until a toothpick inserted comes out clean. 6. Once the dhokla is steamed, remove it from the steaming pot and let it cool. 7. Cut the dhokla into small pieces and keep aside. 8. In a small pan, heat oil and add mustard seeds, sesame seeds and curry leaves. 9. Once the mustard seeds start to crackle, pour the tempering over the dhokla. 10. Serve the Gujarati rice dhokla with coriander chutney or tomato ketchup.Notes
- Make sure the batter is not too thick or too thin. It should be of pouring consistency.
- Do not overmix the batter after adding fruit salt (eno) as it may affect the texture of the dhokla.
- Cut the dhokla into small pieces only after it cools down, as it may crumble while cutting if it is hot.
