  • 1 green bell pepper
  • 2 scotch bonnet peppers
  • 1 tablespoon of ginger paste
  • 1 tablespoon of garlic paste
  • 3 tablespoons of tomato paste
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of curry powder
  • 1 tablespoon of thyme

  • 1 tablespoon of vegetable oil
  • 4 cups of chicken broth
  • 1 pound of chicken thighs (boneless and skinless)

Equipment

  • Blender
  • Cutting board

Method

  1. Wash the rice and soak it in cold water for 30 minutes.
  2. Chop the onions, tomatoes, and bell peppers into small pieces. Blend the scotch bonnet peppers into a paste.
  3. Heat the vegetable oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides. Remove from the pot and set aside.
  4. Add the onions to the pot and cook until they are translucent. Add the ginger and garlic paste and stir for 1 minute.
  5. Add the tomato paste, smoked paprika, curry powder, thyme, bay leaves, and salt. Cook for 2-3 minutes.
  6. Add the chopped tomatoes and bell peppers. Cook for 5-7 minutes until the vegetables are soft and tender.
  7. Add the scotch bonnet pepper paste and stir well.
  8. Drain the rice and add it to the pot. Stir for 1-2 minutes until the rice is coated with the vegetable mixture.
  9. Add the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed.
  10. Add the cooked chicken back to the pot and stir well. Cook for an additional 5 minutes.
  11. Remove the pot from the heat and let it sit for 5 minutes before serving.
